Fruity Spinach and Cantaloupe Salad

Ingredients:

2 tablespoons stevia

2 tablespoon red vinegar

2 tablespoons mint, chopped

A pinch of black pepper

1 avocado, peeled, pitted and sliced

4 cups baby spinach

½ small cantaloupe, peeled and cubed

1 and ½ cups strawberries, sliced

Directions

Mix avocado with baby spinach, cantaloupe, strawberries, stevia, vinegar, mint and black pepper, toss and serve for lunch.
